Cilantro Lime Grilled Chicken
Hey there! Is anyone else super excited that summer is right around the corner?! We have been having absolutely beautiful weather lately (don't mention the snow that's supposed to come next week), so I have been enjoying firing up the grill again. I love doing grilled chicken for my meal prepping because you can do so many different things with it and of course, it's delicious. My cilantro lime chicken can be eaten heated in a rice bowl, over a Mexican chicken salad, as a snack, or in fajitas! It's so easy, and is definitely a go-to for me.
You will need:
4 large boneless, skinless chicken breasts
2 tbl. minced cilantro (fresh is best but can use dried)
2 large limes; juiced
1 large fresh garlic clove; minced
1 tsp. salt
1 tsp. pepper
1 tsp. lime zest
1/2 tsp. chili powder (optional)
1 large freezer bag
In a small mixing bowl, add all ingredients except lime zest. Add a generous amount to chicken breasts. Use all of the seasoning. Set grill to medium-high heat. Cook until chicken is cooked through, about 8 minutes on each side. Remove from heat and add lime zest. For salads, slice chicken longways and serve cool.
