Fajita Roll-Ups (Paleo, Whole30, Low Carb)
So I am completely obsessed with roll-ups these days. You can really do a lot with these. I am going to give you the recipe for my steak fajita roll-ups, but remember, you can use chicken as well!
I have brought these on trips a few times, and I am still so in love. They are delicious, filling, and easy to reheat either on the airplane, in your Hot Logic, or in the microwave!
You will need:
1 lb. Flank steak, pounded thin (you can also use the thin-sliced sandwich steak)
1/2 yellow onion, cut into slices
1 red bell pepper, sliced
1 green bell pepper, sliced
2 tsp. taco seasoning, split
1/2 lime, juiced; other half sliced (for serving)
Cilantro, for garnish
Avocado oil (Extra Virgin Olive Oil can be used as well)
Preheat oven to 350 degrees. In a medium mixing bowl, add vegetables and 1 tsp. of seasoning. Mix together well. Sprinkle remaining seasoning over steak, and drizzle oil. Using your hands, spread evenly. Take vegetables and place in the middle of steak, and roll together tightly into a burrito shape. Place on a baking sheet and drizzle lime juice over roll-ups. Cook for 15-20 minutes, or until steak is at desired temperature. Remove from oven, and serve over cauliflower rice and with fresh avocado!
When I packed this for my trip, I just used it over the extra veggies which was delicious too!
