Flank Steak Street Tacos
My flank steak tacos are definitely a family favorite. What's also great about them is that they are very easy to modify- whether you're doing the Whole30, Keto, or just have food allergies, this recipe is great!
I usually cook the steak on the grill, but seeing as we're in sub-zero temperatures, I just used my stove top skillet to cook. I like my steak to have nice lines, and medium-rare.
You will need:
1 1/2 lb. flank steak, fat trimmed
For the rub:
1 tsp. ground cumin
1 tsp. garlic salt
1 tbl. lime zest
1/2 tsp. chili powder
Mix all spices together. Rub completely over flank steak leaving no bits uncovered. Set on a plate or wooden cutting board, and let sit until steak is at room temperature (this makes for an easier and more even cooking experience).
Over medium-high heat, drizzle EVOO on a grill skillet. Set flank steak on and let grill for about 5 minutes, then turn steak for grill lines for about another five minutes. Flip steak and repeat. Once steak is cooked to desired temperature, remove from heat and let rest for about 10 minutes. Add a little more seasoning to both sides. Cut into small cubes and serve.
I usually use a corn tortilla, add the steak, some diced onions, cilantro, and avocado, then squeeze fresh lime juice on top. If taking on a trip, I keep everything separate and my tortillas in foil until I'm ready to eat.
