Instant Pot Shredded Beef
So I've just realized my last two posts were technically Mexican food recipes. Sorry not sorry, but so is this one! I have recently learned how to use my Instant Pot and I'm absolutely in love with it. It took some trial and error (because I don't necessarily like spending time reading directions), but I've finally figured it out. I had some left over sirloin steaks from some Pho I had made earlier, and I had pretty much everything I needed to make tacos. I wanted something a little bit healthier, so I nixed the Mexican rice, beans, and tortillas and decided to just have some broccoli instead. To make the beef:
You will need:
2 lbs. sirloin steaks; fat trimmed
1 tsp. onion powder
1 tsp. garlic powder
1/2 tsp. ground cumin
1/2 tsp. chili powder
1/2 lime; juiced
Salt and pepper to taste
1 tbl. avocado oil
Set your Instant Pot to saute. In a large mixing bowl, add all spices and mix together. Completely cover steaks in seasoning. Once Instant Pot is ready, add avocado oil and sear steaks until a nice crisp is on the sides. Set Instant Pot to meat/stew and set for an hour. Vent, and then shred beef with a fork. Should pull apart easily when ready.
I loved this recipe because we could make it as healthy or as unhealthy as we wanted. My husband had it with fajita vegetables on a tortilla and with cheese and toppings. I had it in a bowl with steamed broccoli, rice, fajita vegetables, and toppings (cilantro, jalapeno, and diced tomatoes). It was delicious both ways! Enjoy!
