Paleo Ranch Chicken Skewers
I love to grill (which is no secret). It makes food just taste so much better, in my opinion. I love this recipe because it's easy, light, and perfect for summer days. It also brings a taste of home to your galley!
For the seasoning:
2 tbl. Parsley
1 tbl. Onion Flakes
1 tsp. Celery Salt
1 tsp. Dried Dill Weed
1 tsp. Dried Chives
1/2 tsp. Onion Powder
1 tsp. Garlic Powder
1/2 tsp. Black Pepper
You will need:
1 lb. Chicken breasts, fat trimmed and patted dry
1 tbl. EVOO
Set your grill to medium heat. Cut chicken into strips. In a large mixing bowl, add ranch seasoning, EVOO and chicken. Mix together well and evenly. Stick chicken onto skewers. Grill each side about 4 minutes, or until cooked through. Serve over fresh greens and your favorite dressing!
Packing tip: Keep greens separate from your chicken, and have your dressing packed on the side to keep the greens fresh. Enjoy!
