Spinach and Garbanzo Fritters (Vegetarian)
Found another new and yummy recipe! This one I actually found in a magazine given to me by another flight attendant. It's got a lot of great things in it, and is a perfect snack. It is also very filling.
For the dipping sauce:
1 c. plain Greek yogurt
1/4 c. chopped cucumber
2 tbl. minced onion
2 large garlic cloves, minced
1 tbl. fresh lemon juice
1 tsp. kosher salt
1 tbl. finely chopped parsley
Mix all ingredients together. Cover and refrigerate.
For the fritters:
2 15 oz. cans Garbanzo beans, drained
1 c. fresh spinach leaves
1/2 yellow onion, diced
3 tbl. all-purpose flour
3 garlic cloves, minced
1 1/2 tsp. kosher salt
1/2 tsp. black pepper
1/4 tsp. ground sage
1/4 tsp. coriander
Canola or vegetable oil
Place all ingredients except oil in a food processor. Puree until smooth and transfer to a mixing bowl.
In a medium sauce pan, heat about 1/2 inch of oil. Shape batter into balls and place in oil. Flip after about 2 minutes or until browned, and lightly press down, forming into discs. Place on a paper towel lined plate to drain, and lightly salt. Serve with yogurt dipping sauce.
If you're taking these on a trip, I suggest lining your container with a paper towel so they don't get soggy. Also, if you're reheating, I don't recommend covering the fritters. This will keep them crispier! Enjoy!
