Tuna Salad Stuffed Bell Peppers
I came up with this recipe on a day that I needed to use up some groceries before getting more groceries. But I had tuna, I had homemade ranch, and I had bell peppers... What else could you want? This recipe is easy, takes little to no time, very little clean up, and requires no cooking! This was also an easy snack to pack for my trip. Instead of keeping the pepper halved, I sliced it and used the tuna salad as a dip.
You will need:
2 cans tuna; drained of water
2 tbl. homemade ranch
2 tbl. diced red onion
2 tbl. diced celery
1 tbl. diced bell pepper
Salt and pepper to taste
1 red bell pepper; halved; ribs and seeds removed
In a medium mixing bowl, add tuna, ranch, vegetables, and salt and pepper. Mix together well, and spoon into halved bell pepper.
