Grilled Tilapia Salad

I love salads. But I sometimes get a little sick of them when I'm on the road. However, I was watching the Food Channel on my last overnight, and I came across this recipe. I modified it a little bit, as tilapia is a cheaper white fish than halibut, but it was really tasty and a new, healthy summer salad that I'm excited to share with you all!

You will need:

3 tilapia fillets

3 c. coleslaw mix

1 c. fresh pineapple

1 c. grape tomatoes

1 c. sliced white onion (big enough for skewers)

1 tbl. EVOO

Salt and pepper to taste

For the dressing:

2 limes; juiced

2 tbl. EVOO

Salt and pepper to taste

1/4 tsp. fresh garlic; minced

1 tbl. fresh minced cilantro

Pinch of chili powder (optional)

1 tsp. honey

Set grill to medium-high heat. Skewer tomatoes, pineapple, and onion. Lightly drizzle EVOO, salt and pepper over skewers. Place on grill, turning every few minutes until grill marks appear.

Meanwhile, place tilapia fillets on an aluminum foil boat. Drizzle EVOO and salt and pepper. Using your hands, evenly spread over fillets. Place on grill and cover. Tilapia will be white and flaky when it's ready.

For the dressing, add all ingredients together and whisk vigorously until honey is thoroughly mixed in.

Remove skewers and fish from grill. In a large salad bowl, toss veggies, coleslaw mix, and 1/2 of your dressing together. Add tilapia filet and drizzle with remainder of the dressing. Garnish with cilantro and lime wedge.
